Bret, the DOF is so shallow as the wind kept moving the flower. This is why the shutter speed and ISO are so high. No matter how good your tripod or plant clamps in a high wind you sometimes have to give up and try a different approach.
I just tried to get the tips of the centre of the flower in focus and use the shallow DOF to to give a nice background.
